Creamy Chicken Tortilla Soup | |
6 chicken breasts 3 c. chicken broth 3 cloves garlic 1 onion, chopped 3 Tbsp. butter 4 Tbsp. flour 1 qt. half and half (or whole milk) | 1 can cream of chicken soup 1 c. salsa 1 can creamed corn 2 tsp. cumin 1 packet fajita seasoning 3 Tbsp. chopped cilantro |
Saute garlic, onion and butter for 5 minutes. Add flour and stir for one minute. Add chicken broth and half and half and bring to a simmer stirring constantly. Turn heat to low and add chicken soup, salsa, corn, diced chicken, cumin, fajita seasoning and cilantro. Stir and heat for 15 minutes. Serve with tortilla chips, cheese and chopped cilantro. *I added one can each of diced tomatoes, green chiles, and black beans. | |
